Over 80% of coffee imported into the US is “commodity” grade and is used by the government, flavor extraction companies, and large national-brand coffee roasters for their mass-produced coffees typically found in grocery stores or drive-through services. These beans are largely from factory farms or low-wage cooperatives. “Specialty grade” coffee accounts for less than 10% of coffee consumption and only 3% is considered Fair Trade.

We only use specialty grade coffee that is ethically sourced. We are committed to being completely transparent in our sourcing and provide detailed source information on our product pages. We only use US-based coffee importers who provide clear source information. Our long term goal as we grow is to source coffee directly through the producers. You can be assured that the beans you brew from us are wholesome, high quality and provide a living wage to everyone in the supply chain.

 

The Brazilian Fazenda coffee used in our first run of BIGFOOT is sourced from the Dutra family estate.

Our in-house sample roaster helps us quickly find the sweet spot for each coffee before moving to production or making purchasing decisions.

 

Roast: Goal Oriented

A great coffee offering from us begins with the flavor profile and tasting experience we want to achieve. We select coffees based on their natural cupping notes and roast qualities to begin the process of sampling. We roast and cup many samples. We make small changes until we get exactly the right combination of flavor, body, acidity, and aroma to meet our goals.

Our process is very intentional with specific results in mind for each offering while choosing the right beans to hit that exact note. This is contrary to the older philosophy of picking a region and maximizing the potential of that specific bean without a flavor goal in mind.

Production: Local

We roast all of our coffee in-house. We do not buy pre-roasted coffee from a supplier and resale it. The selection of the raw beans, the roast profiling, the quality control, the packaging, and the delivery/shipping are all handled by us so that every step maintains the highest level of consistency and quality that we stand behind.

We use a fully US manufactured 5 kilo roaster from USRC to produce our coffee. Our commitment to quality and consistency is realized with every delicious sip.

Did you know that product packaging accounts for 30% of landfill waste? Wow! While a coffee bag inside a beautiful box inside another ornate, custom printed mailer box with cards, sleeves, and stickers can be a fun to unwrap, it really isn’t necessary for a wholesome and exciting coffee experience. We strive to be mindful of the impact our business decisions have in the long run. Rest assured that our coffee packaging is thoughtfully chosen for the smallest ecological footprint as possible without sacrificing product freshness or our unique identity. More coffee, less packaging. What’s not to love?

Our holistic approach to sustainability takes into account fair wages for smallholder farmers, minimizing our packaging footprint, using efficient roaster techniques, and, most importantly, being mindful of our commitment during every business decision.
