The Bigfoot Blend is our play on the American classic coffee that most of us grew up on. The bean selection and the roast level are delicately balanced between enhanced chocolate flavors and lowered acidity while not introducing bitterness. The blend leans towards a full bodied and smooth texture while developing the flavors of sweet caramel and chocolate. This well rounded coffee is easy-sipping and flavorful whether prepared black or with cream and sugar. Truly a crowd-pleaser that anyone can enjoy.

Beans in the Blend

BIGFOOT is our house roast. We adjust the coffee beans in this blend as new harvests are available. For this season, we are using a Colombian washed coffee and a natural Brazil.

Colombian Huila Excelso

The Huila region is consistently a top choice for Colombian coffee. Known for producing high-quality, often award-winning green coffee beans, Huila is also celebrated for its uniquely delicate cup profile, which includes bright acidity, sweetness, and a fragrant aroma. Located near the equator and enriched with volcanic soil, Huila's coffee boasts a signature profile of fruit and caramel notes, sweet acidity, and intense aromas. The region has two harvests: the main crop from September to December and the mitaca crop from April to May/June.

The Excelso class of unroasted coffee is specific to Colombia and designates a medium coffee bean size (Supremo being the largest) and specialty grade.

BRAZIL GUAXUPÉ SEMI-WASHED

In Guaxupé, a municipality in southern Minas Gerais, coffee production is the leading agricultural activity, and for good reason. The area's high altitudes and unique micro-climate provide perfect conditions for cultivating specialty coffee, with cooler temperatures averaging around 68°F (20°C), compared to the rest of the region. The distinct wet and dry seasons further enhance coffee production. Sul de Minas, responsible for about 30% of Brazil’s Arabica coffee, is renowned for consistently producing high-quality coffee.

Semi-washing coffee requires fewer steps compared to the washed “wet” process. In this method, the outer skin of the coffee cherries is mechanically removed, leaving the mucilage attached to the beans. The beans are then stored before the mucilage is washed off with water. Finally, the beans are dried. This semi-washing process typically results in a coffee with lower acidity.
