Our first light roast on offer and it doesn’t disappoint! We chose this Colombia Pink Bourbon for its big body and sweetness even at a light roast. We apply gentle heat at the end of the roast before pulling the coffee out of the roaster to maintain the unique characteristics of this coffee. We taste complex notes reminiscent of black tea that give way to bright citrus and sweet pomegranate on the finish.

Some light roasts need extra care when brewing to get the most out of them but this one holds up well to normal coffee makers while the best brews will come from pour over. Also makes for a lively shot of espresso!

The Beans

Our Colombia Huila Pink Bourbon is a single origin coffee meaning it is not blended with any other coffees.

Colombia Huila Pink Bourbon Double Ferment

Regionally this coffee is known as “Palo de Rosa.” In the municipalities of Pitalito, Palestina, and La Argentina, sixteen carefully chosen farmers form the “Rose Tree” group, where "palo" or "branch" serves as a metaphor for the coffee tree. Each farmer individually cultivates and processes their coffee, working with a unique cultivar recently identified as genetically similar to Ethiopian landraces, rather than the previously believed "Bourbon" type. In fact, this coffee is not a Bourbon variety at all. The coffee’s Ethiopian heritage shines through with lively acidity and fruity/floral aroma and flavor.

These farmers use a two-stage fermentation process, enhancing the traditional washed coffee method. Initially, after washing the coffee cherries, they undergo a brief “pre-fermentation” stage, allowing the coffee to ripen and lightly macerate before depulping. This is followed by an extended secondary fermentation period of 48 to 70 hours in parchment. The process concludes with the coffee being thoroughly washed and then dried on shaded patios for 25 to 30 days.
