Our first honey process coffee is a delight. During the process of preparing the coffee to be roasted some of the coffee fruit is left on the coffee which creates unique flavors. Honey process is one of the rarer ways to prepare coffees mainly due to it being a hybrid of the traditional washed and natural process. It is also a trickier coffee to roast because of the additional sugars on the outer surface. It is worth the effort!

This El Salvador carries deep chocolate with black cherry acidity and a honeyed sweetness. This one is our favorite of this year’s first round of single origins and is definitely one not to miss!

Our El Salvador Cerro Las Ranas Honey Process is a single origin coffee meaning it is not blended with any other coffees.

El Salvador Cerro Las Ranas Honey

Cerro Las Ranas coffee is named after a lagoon filled with thousands of frogs on the farm in Apaneca, El Salvador. Produced by the family-owned JASAL operation, led by Jose Antonio Salaverria and his sons, the coffee is meticulously managed from year-round farm care to quality control in the cupping lab. The pulped natural process, or honey process, involves pulping ripe cherries and drying the beans, still coated in mucilage, on clay patios with regular turning for even drying.
